We Had Fun Canning

Today Jerry and I did a lot of canning.  We made 3 jars of Spicy Mango Chutney, 6 jars of Blueberry Jam and 11 jars of Strawberry Jam.
Blueberry Jam

2 1/2 pints of Blueberries
1 tbsp Lemon Juice
1/2 tsp ground nutmeg
3/4 cup of water
5 1/2 cups of sugar
1 box of pectin

Wash the berries and add everything except the sugar and bring to a boil.  Then remove from the heat and stir in the sugar and return to the heat and boil for 1 min.  Remove from the heat and quickly skim off the foam.  fill jars leaving 1/4 inch of room at the top.  Place jars in a hot water bath and heat depending on your Altitude (my area is 10 mins), remove and let cool to room temp.  While cooling the jar should seal.

Final Product
Strawberry Jam
Cut the top off the Strawberries and slice in half
Crush Strawberries and add 4 cups of crushed strawberries and 4 cups of sugar and 1 box of Pectin

Bring to a boil and then simmer for 10 minutes and stir frequently then remove from the heat and skim off the foam.

Fill jars and then heat in canning pot and let cool (make sure they seal)

YAY we had so much fun canning!  My feet kill from standing on them for hours but it was well worth it.  We made so much good jams and chutneys that we can share with our friends and family and it will take us through the year.  We are such a good team!
